It’s something that can bring people together, sometimes even strangers. You would find that food is usually a necessary item in many occasions or even day to day events. From the regular breaskfast, lunch and dinner to snacking to weddings, fashion events, baby and bridal showers and more.

I also like to explore the health aspect of food. This basically means I feel happier when I know the food I am giving to my body would be beneficial to my body and so me.

What of you? What thoughts come to mind when you think food?

I got to make a meal with HLK’s blend of peppers and let me telllllllllllllll you something! It was yummy! Everyone at home who ate it, enjoyed it. HLK means Healthy Living Kitchen and they are an indigenous food processing SME located in Jos, Plateau State. This company was set up to promote the growth and empowerment of local farmers and they specialize in processing fresh farm produce in the most hygienic manner while following global best practices in order to preserve the natural taste and freshness of foods.

Food is something I enjoy talking about. Reading about. Watching being made. Making and exploring. So it was exciting to use their product and to write this post.

So what did I make with my HLK blend of peppers? You guessed right! Peppered chicken and sauce.

Ingredients:

HLK Blend of peppers

Vegetable oil

2 teaspoons of dry powdered ginger

2 teaspoons of curry

One medium size onion

2 knorr seasoning cubes

Cooked chicken

Chicken stock

How to:

Cook your raw chicken till it’s done, adding seasoning to your taste. I used 2/3 of a small chicken for this. I got to use the remaining 1/3 of the chicken for something else, which you may get to see a future post on the blog.

When the chicken is ready, put your frying pan on the stove and add one serving spoon of oil, then add in the onions (chopped) and stir for about 3 minutes. You want the onion flavors to begin to infuse into the oil.

Add the curry, ginger and knorr seasoning cubes to the onions and stir for an additional 3 minutes.

Now pour the content of one jar of HLK blend of peppers into the pan and stir occasionally for about 10 to 15 minutes or until content of the pan is cooked. Taste it and add salt if you feel the need to. Think moderation though.

Then gently add the chicken and allow to cook for 5 minutes, stir after 5 minutes and allow to cook for 5 more minutes. Repeat the ‘stir and allow to cook’ two more times. Pour in two serving spoons of the chicken stock and give it some good 5 minutes to cook. If the sauce is to your preferable thickness then you are good to go, if not, add some more chicken stock and you are good!

Taste to ensure it’s to your liking and add salt where necessary. Let me tell you even the kids at home enjoyed eating this peppered chicken. Its something you can make for the whole family. I served mine with chips and salad. You can have yours with rice or yam or salad or just by itself.
