Weekend are always exciting. We look forward to a time perhaps doing what we really want to do and not just what we have to do. We can also get to spend time with friends and family. So this weekend, you can make stir fried jollof rice and share with family and friends.

What you need:
1 cup of rice
1 cup of beans
2 cups of chopped tomatoes and tatashe mix
2 medium onions
2 tablespoons of tomatoes paste
2 serving spoons of soya oil
2 whole eggs
2 knorr cubes
2 teaspoons of salt
1 tablespoon of dry pepper
2 tablespoons of curry
1 teaspoon of thyme
1 teaspoon of Italian seasoning
1/2 cup of water
Meat of choice (optional)
How to/Method:
Wash the beans and put in a pot with water that quadriples the level of the beans. Place on the cooker and allow to cook. When the beans is soft but not well done, wash the rice and add it into the beans so that the beans and rice would get cooked at hopefully the same time.
Once the rice and beans is ready, pour into a strainer. Pour the oil into a frying pan, add in the chopped tomatoes, tatashe and chopped onions. When the mix is fried, add the tomatoes paste and allow to fry for about 5 minutes. Put in the curry, thyme, Italian seasoning, knorr and dry pepper. Once the tomatoes mix is well fried add the rice and beans into the pan. Also break in the eggs and add whatever (cooked/grilled meat or fish you have). I added in grilled fish.

Now stir the whole content of the of the pan for about 8 minutes ( up to 15minutes, depending on how fried and crispy you want the stir fry). When it’s well fried, add the salt and water, cover and allow to stream. Then fry for about 5 minutes and you are ready to serve!
